Outside the Office

At her father’s urging, Nicole feels lucky to have lived on an organic farm in Shanagarry, County Cork, Ireland, for five months, attending the Ballymaloe Cookery School. She graduated with high honors from an intensive culinary certificate course run by celebrity chef Darina Allen. After working for a short time in a fine-dining establishment, she still enjoys the takeaways: baking breads and croissants. She also learned easier methods toward both elaborate French cooking and old family recipes.

Nicole also enjoys black-and-white landscape photography.

Nicole has volunteered her time and talents to a wide range of charitable organizations, including the Houston Livestock Show and Rodeo, Texas Children’s Hospital and a local domestic abuse shelter.
